My New Fav Recipe! Jerk Butter bean and Mushrooms

 

Happy New Year Friends! Hope everyone is having a fantastic year so far!

I thought a great way to start 2017 is by sharing my new FAV recipe with you all. Jerk butter bean and mushroom recipe cooked with Caribbean hard food is so GOOD!  This recipe is suitable for; Vegans, Vegetarians, nut free, gluten free, wheat free, milk free, egg free and dairy free.


I was keen to try this recipe because I'm always looking for new recipes for my son to try who is allergic to milk, nuts and eggs and  Butter beans are a good source of protein, iron, zinc and magnesium and are considered a low-energy-dense food, which means it has a low-calorie content.

Butter bean and Mushroom Ingredients:

  • Carton of Butter beans
  • Mushrooms 
  • Handfull of green beans
  • 1 Onion
  • 1 clove of garlic
  • ½ a green pepper
  • Sunflower oil Spray
  • Passata
  • Thyme
  • Soy Sauce
  • Jerk seasoning
  • All Purpose seasoning

Hard food ingredients:

  • 1 green banana
  • Slice of boiled pumpkin
  • 2 slices of boiled yellow yam
  • 1/2 boiled sweet potato 
  • 1/2 boiled potato 

Vegetable ingredients

  • Carrots
  • Cabbage
  • Green beans

The method for the Butter bean and Mushroom mix:

  • Boil Butter beans on medium heat for 5 minutes and drain 
  • Boil green beans  for 5 minutes and drain
  • Preheat sunflower oil in pan
  • Cut , clean and slice mushrooms, onions, garlic and peppers and fry in the pan
  • Add 4 table spoons of passata sauce
  • Add the drained butter beans to the mushrooms, onions, garlic and peppers in the pan
  • Add 1 teaspoon of soy sauce, sprig of thyme,
  • Sprinkle a teaspoon of jerk seasoning and all purpose over the mushrooms, onions, garlic and peppers and mix all together
  • Leave to cook for 10 minutes and enjoy!

Just added the Jerk seasoning, all purpose seasoning and soy sauce and now now they are ready to eat
